Kale Chips

I found this idea on Lynn's blog. She always has great low cal snack ideas and I couldn't help but want to try this one.




Kale Leaves
Salt
Olive Oil








Prepare your Kale by rinsing it in cold water. Sometimes it can have sand and gritty debris in it.

Throughly dry your kale in a salad spinner or with some paper towels.

Cut (or tear) the stems out of the middle. They are very tough and won't dry up properly when baked.

Break your kale up into bite-sized pieces.


Line a cookie sheet with parchment paper.

Spread your kale out on the cookie sheet as best you can.

Drizzle with olive oil and sprinkle with salt.

Place in a 350 degree oven for 10-15 minutes or until the kale becomes dark green and has a touch of brown on the edges.




Allow the kale to cool for a few minutes.

The kale may still be soft and flexible when you first pull it out, but as soon as it cools it should get crisp and rigid.






Use the kale chips to enjoy other low-carb snacks like cheese or chicken salad.

As you can see the chips become rather sturdy, and can hold cheeses and dips pretty well.

The best part:

1 cup of Kale is only 25 cal, so you could probably eat these things until the cows come home with no guilt.


Just be careful of how much oil you use and the nutrition of the things you  put on them, you can quickly turn a low cal snack into a major "OPPS!" in no time.


PS. Thanks everyone for your encouragement this week. I was feeling very discouraged but you are all right, weighing daily is pointless and I know my weight will fluxuate daily. I am just putting too much pressure on myself. I think I am back on track now.

  3. Yeah probably! You could also probably skip it all together. I drizzled it because it helped the salt stick and gave them a little extra flavor.

  4. I've never heard of Kale before but it looks like a great snack. I imagine it tastes great with hummus. Yum!
